Mom Sweet Potato Pie

  • 4 Sweet Potatoes medium unpeeled
  • 1 1/3 cup evaporated milk
  • 1 cup sugar white
  • 1/2 cup brown sugar light
  • 2 eggs large
  • 4 tbsp cold butter unsalted cut into small cubes
  • 2 tbsp orange zest I used a naval orange
  • 2 tsp lemon extract
  • 1/4 tsp ginger ground
  • 1/4 tsp nutmeg ground
  • 2 pie crust frozen regular size 9 in or homemade

Recipe Notes

  1. Preheat oven at 350 degrees
  2. Scrub sweet potatoes and cut off the front and back ends, in a medium pot fill with cold water to cover the sweet potatoes on medium heat boil sweet potatoes for 40 minutes or until fork tender.  Once potatoes boil let stand for about 15 minutes.
  3. Drain water from sweet potatoes set aside in a large bowl, once cooled peel the sweet potatoes and then with a hand mixer mix the sweet potatoes until slightly smooth.
  4. Add the milk and sugar, egg and mix well.
  5. Add the remainder of the ingredients and mix well until all ingredients are well incorporated with consistency of a pudding.
  6. Fill both pie crust evenly, bake in oven for 3 hours. Pies will be a nice deep orange in color and the crust will be a nice golden brown in color.  Let pies cool before serving.
